For the pancakes:
1 1/4 cups gluten free flour
2 teaspoons baking powder
1 1/4 cups plant-based milk
1 super ripe banana
1 tablespoon maple syrup
2 teaspoons of vanilla extract
Mix all of the pancake ingredients except the coconut oil together in a bowl or a blender.
Drizzle some coconut oil in the pan to avoid sticking.
Make pancakes in desired shape and size.
Serve with the toppings and enjoy
